Basil-Kissed Ricotta Pasta

Creamy, comforting and full of colour, this ricotta pasta is the kind of dinner that feels special without asking too much of you. Soft ricotta melts into a silky sauce with sweet peppers, tender onions and plenty of herbs, coating every strand of spaghetti.

Finished with fresh basil, it is rich without being heavy and comes together beautifully for an easy weeknight meal or a relaxed dinner with friends.

Ricotta pasta

This dish brings together everything we want from an easy pasta dinner: comfort, colour and plenty of flavour without feeling too heavy. The ricotta turns into a soft, creamy sauce, the peppers add sweetness and freshness, and the basil lifts the whole plate with that unmistakable Italian warmth.

It is also wonderfully forgiving. There is no complicated technique and no need for perfect presentation. It is the kind of meal that can be made after a long day, served straight from the pan and still feel generous and special. Every forkful is creamy, savoury and just a little rustic, which is exactly why it has become one of those dishes we are always happy to return to.

Variations

More spicy

Add extra piri-piri, chilli flakes or fresh red chilli. A little smoked paprika also gives it a deeper kick.

Extra creamy

Add more ricotta or stir in a little cream cheese, mascarpone or plant-based cream.

Gluten-free

Use gluten-free pasta and check that the vegan mince, seasonings and Parmesan are also certified gluten-free.
Protein boost

Use lentil or chickpea pasta, add more vegan mince, or stir in lentils, white beans or chickpeas.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days. For the best texture, keep the pasta and sauce separate when possible.

Reheat gently in a pan or microwave, adding a small splash of water or milk to loosen the sauce. Freeze for up to 2 months, though the ricotta sauce may become slightly grainy after thawing.

Chef's Note

Keep a mug of pasta water nearby. A splash of those “tears of the pasta gods” helps the ricotta sauce turn silky and cling beautifully to every strand. Add it little by little, and keep the sauce at a gentle simmer so it stays smooth and creamy.
