Piña Colada Sunrise Chia Pudding
Piña Colada Sunrise Chia Pudding brings the soft, sunny flavours of pineapple and coconut into an easy breakfast that can be prepared the night before. The chia seeds settle into a cool, creamy pudding while the pineapple adds freshness and a gentle tropical sweetness.
Finished with juicy fruit and crisp coconut flakes, it feels a little indulgent without becoming heavy. Serve it straight from the fridge for a bright summer breakfast, a simple make-ahead snack or a quiet reminder that ordinary mornings deserve something lovely too.
This chia pudding is made for slow, sunny mornings. Creamy coconut, sweet pineapple and gently thickened chia seeds come together in a breakfast that feels tropical without being overly rich. Prepare it the night before, let the flavours settle in the fridge and finish it with fresh pineapple and crisp coconut flakes just before serving. The result is cool, bright and satisfying, with the easy charm of a piña colada and none of the fuss.

Recipe Notes
Assemble with pineapple puree right before serving. If making this ahead of time, store puree and chia pudding separately. The water from the pineapple puree will otherwise leak into the chia pudding with time and form a watery layer on top of the pudding.
For a summer frozen twist, freeze the pineapple and blend them frozen with half a cup of frozen banana slices for some added creaminess.
