Summer Strawberry Tart with Agar Glaze
When strawberries are at their sweetest, they need very little to shine. This light, entirely plant-based strawberry tart combines a crisp crust with juicy summer fruit and a clear agar glaze, creating an elegant dessert without gelatine. Fresh, refined and surprisingly simple to make.
This strawberry tart is summer at its simplest. A crisp, lightly vanilla-scented crust holds a generous layer of fresh strawberries, set beneath a clear glaze made with strawberry juice, lemon and plant-based agar. No heavy cream, no excessive decoration, just ripe fruit given all the space it needs to shine.
That is exactly why this tart is one of our favourites. It proves that a special dessert does not need to be complicated. The fresh strawberries, the gentle sharpness of the lemon and the crisp base balance one another beautifully. The glossy fruit layer is also made without gelatine, keeping the tart entirely plant-based without losing any of its celebratory appeal.

Keep the strawberries at the centre
1Select ripe, firm strawberries and dry them thoroughly.
2Press the pastry into the tin and chill it for 15 minutes.
3Bake the shell, let it cool briefly and arrange the sliced fruit.
4Cook the agar glaze for one minute, pour it over the fruit and chill until set.

Dry the strawberries thoroughly
Water left on the berries can make the slices slide and dilute the glaze at the surface. Pat the fruit dry before slicing and arranging it.
